Soup Of The Day

Some days are just perfect for Soup
It’s a sunny 50°, but the brisk wind makes it feel quite chilly.
Here is an easy, nutritious vegetable soup recipe from my table to yours

Ingredients:

● 1 pack chickpeas washed and cooked till tender. Save the chickpeas water. Do not discard
● 2 stalks celery chopped
● 1 small onion chopped
● 4 cloves fresh garlic chopped
● fresh thyme
● 2 stalks scallion chopped
● 2 cups cabbage chopped
● 1-pint mushrooms washed and chopped
● 6 whole pimento grains
● 2 slices ginger root minced
● 1 carrot sliced lengthwise
● 1/4 tsp crushed red pepper
● Salt to taste
● pinch black pepper

Add all ingredients to the chickpeas water. Stir. Cook on low till veggies are tender.
Enjoy a nutritious, delicious, and easy soup on this chilly afternoon
