Creamy Garlic & Onion Soup
● I head of garlic peeled and minced (about 10 cloves)
●1 medium onion peeled & chopped
●4 stalks scallion minced,(set aside)
●1 handful Italian Parsley chopped (set aside with scallion)
●6 whole pimentos
●4 Irish potatoes cut small. Leave skin on
●2 cups organic vegetable stock
● 1 Turnip bulb washed and cut small with skin on
● 3 tablespoons olive oil
● 1/2 tsp Black pepper
● 1/4 cup unsweetened coconut milk
● 1 carrot cut small
In a deep pot, heat oil on low. Add onion and stir well for 1 minute. Add garlic. Stir well for 1 minute.
Add potatoes, pimentos, turnips, carrots. Fill the pot to 1/2 way with water. Add stock. Bring to boil. Cook for about 30 minutes. Turn off the stove and let cool.
Once cool. Pour into blender. Add scallion & parsley. Blend until creamy. Pour back into the pot. Turn heat to low. Stir in coconut milk and black pepper. Simmer for 5 minutes
Top with shredded Italian parsley & minced scallion
I love the flavor of this soup. Garlic & onion have natural antibiotics, so this is a great soup to consume during flu or cold seasons. My hubby & love it during the colder weather. It’s a wonderful pick me upper.
