Healthy Meat Alternative

Ingredients

● 2 cups cooked & drained black-eyed peas
● 1/4 yellow sweet pepper chopped
● 2 cloves fresh garlic chopped
● 1 small ripe tomato chopped
● 1 teaspoon fresh or dried thyme leaves
● 1/4 teaspoon Caraway seeds
● 2 slices beetroot cut tiny
● 1 small onion chopped
● 4 tablespoons olive oil
● Pinch salt to taste
● 1/4 teaspoon crushed red pepper

Heat oil on medium heat.
Stir in all vegetables except peas. Lower heat to low. Cover & steam for 5 minutes stirring occasionally.
Mix in peas. Stir. Cover and simmer for 5 minutes.
Serve with a Raw salad & baked potato
