Eating Healthy is an important step to a Healthy Lifestyle.  We ought to try our best to eat more plant-based foods including more vegetables, seeds, nuts, grains & fruits. While minimizing processed & unhealthy foods.

Micronutrients found in vegetables provide the nutrients we need for optimal health, without the extra macronutrients that can lead to weight gain or weight retention.

You may cook enough of these healthy foods to last for a few days, refrigerate & reheat as needed.

I’d like to share this delicious recipe with you with the hope that you’ll try it.

Healthy cooking can be easy to prepare, inexpensive & tasty.

Ingredients:

  • 8 whole mushrooms washed
  • 1 cup cooked chickpeas with a little of it’s juice
  • 1 small onion chopped
  • 1 small ripe tomato chopped
  • 1/4 green sweet pepper chopped
  • 4 cloves garlic minced
  • 1 cup sliced corn on the cob
  • Pinch salt to taste
  • Pinch of allspice powder
  • Scotch bonnet pepper minced (to taste)
  • 1/4 tsp fennel seeds
  • 1/4 tsp caraway seeds
  • 4 tbsp olive oil
  • 4 tbsp coconut oil

Mix both oils together, heat on medium. Add onion, garlic, tomato , stir well.  Stir in salt, pepper, seeds. Add everything else. Lower heat to low. Simmer for about 10 minutes.

Serve over a bed of raw salad & cooked quinoa, rice, or baked sweet potato.
