Meatless Dinner 8/23/21
Everyday is a day to eat Healthy. Adding more veggies to our diet can help us to live a healthy lifestyle.
Ingredients:
- 1 carrot washed and cut lengthwise
- 1 cup organic mushrooms washed & halved
- Chopped kale
- 1 small onion chopped
- 6 cloves fresh garlic
- 1 cup cooked chicken peas
- 1/4 cup chick peas water
- 1 medium sweet potato washed and cut in 1 inch cube, leave skin on
- 1 stalk green onion chopped
- Fresh thyme
- 1 medium ripe tomato chopped
- 4 tablespoons olive oil
- 1/4 tsp caraway seeds
- 1/4 tsp fennel seeds
- Pinch salt to taste
- 1/4 tsp crushed red pepper
Heat oil on medium, reduce heat to low
Stir in garlic cloves, stir and roast till slightly golden. Add caraway, fennel, crushed red pepper & salt, stir. Add all other ingredients and stir well. Cover and simmer till potatoes are tender
Serve with salad
This is a nutritious, easy to prepare, low calories & healthy meal. Enjoy
Salad 8/23/2021
Ingredients
- kale washed and cut tiny
- Raw purple cabbage minced
- 2 slices raw onion minced
- 1 small ripe tomato cut small
- 4 mint leaves minced finely
- Fresh thyme leaves
- Moringa leaves
Mix well
Drizzle with olive oil & apple cider vinegar with the mother or your favorite healthy salad dressing
