Recipe:

  • Jamaican pumpkin sliced thin with skin on
  • Onion chopped
  • 2 cloves fresh chopped garlic
  • Tomato chopped
  • Yellow sweet pepper chopped
  • 1 cup cooked and drained lentils
  • 1 slice ginger root thinly diced
  • Pinch of salt, dash of cumin powder, dash of allspice powder, pinch of fennel seeds, dash of crushed red pepper
  • 1/8 cup warm water

Place everything in a saucepan. Simmer on medium for 10 to 15 minutes.

Salad:

  • Bokchoy washed & chopped
  • A few bits of chopped apple
  • (Handful of nuts optional)
  • Drizzle with apple cider vinegar
