Recipe:
- Jamaican pumpkin sliced thin with skin on
- Onion chopped
- 2 cloves fresh chopped garlic
- Tomato chopped
- Yellow sweet pepper chopped
- 1 cup cooked and drained lentils
- 1 slice ginger root thinly diced
- Pinch of salt, dash of cumin powder, dash of allspice powder, pinch of fennel seeds, dash of crushed red pepper
- 1/8 cup warm water
Place everything in a saucepan. Simmer on medium for 10 to 15 minutes.
Salad:
- Bokchoy washed & chopped
- A few bits of chopped apple
- (Handful of nuts optional)
- Drizzle with apple cider vinegar
